♥ Roasted Red Potatoes with Bacon and Cheese
1/2 cup ranch dressing
1/2 cup shredded cheese
1/4 bacon bits (you could use real bacon too if you wanted)
2 lb small red potatoes, quartered (about 6 cups)
1 tbsp chopped fresh parsley
Preheat oven to 350 F. Mix dressing, cheese and bacon bits in large bowl. Add potatoes; toss lightly. Spoon into lightly greased 13 x 9 baking dish; cover with foil. Bake 40 min. Remove foil; bake an additional 15 min. or until potatoes are tender. Sprinkle with parsley.
Makes 8 servings.
♥ Tasty Turkey Wrap
1/4 cup whole berry cranberry sauce
1 tbsp mayonnaise or miracle whip
2 flour or corn tortillas
2 lettuce leaves
4 thin slices of cooked turkey breast
2 slices of cheese
4 slices of bacon (I will cook mine in the microwave)
Mix cranberry sauce and mayo; spread evenly over tortillas. Top each tortilla with lettuce leaf, 2 turkey slices, cheese and bacon. Eat!
♥ Egg McMuffins
1 English Muffin split
1 large ege
2 strips of bacon (or other meat of your choice ie ham, Canadian bacon, sausage)
1 slice of cheese
Cook meat according to package directions. For me I would microwave my bacon.
Place english muffin half on microwavable plate. Crack egg carefully on muffin. Microwave on HIGH 40 sec. Fold bacon strips in half. Place folded strips and cheese slice over egg. Top with remaining english muffin half. Microwave on HIGH 30 sec or until egg white is completely set and yolk is thickened around edges.
Make serving according to your family size and need. 🙂
♥ Pork and Beans
- 1 can each of beans (your choice). I use kidney, pinto, white and garbanzo. Also, feel free to use more if you are making for a larger crowed
- bbq sauce
- ketchup
- maple syrup*
- brown sugar*
- spices
- pork or hamburger
*this is for warming it up as left overs and making it seem like a whole new meal.
Get your crockpot out and pour in all the beans, don’t drain. Add in meat (I just throw mine in frozen). Now add bbq sauce and ketchup, usually 1/4 cup or so for each. Slow cook on high for 4 hours, then turn it down to low until you serve it. Add spices to taste, and additional bbq sauce or ketchup.
Serve with cheese or tortilla chips or both.
♥ Homemade Mac and Cheese
This is a great recipe for anytime that you have leftover ham. Its quick and easy and can be made ahead.
Ingredients
6 to 7 ounces of elbow macaroni (about two cups)
2 tablespoons grated onion (optional)
1 teaspoon salt
1/4 teaspoon pepper
3 cups shredded cheese (use something you like)
2 cups Thin Whit Sauce* (recipe will be following)
1 tablespoon butter or margarine
1 to 2 cups diced ham
*Thin White Sauce
For each up of sauce
1 tablespoon butter or margarine
1/2 to 1 tablespoon flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup milk
Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stiring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Heat oven to 375. Cook macaroni. Place half the macaroni in ungreased 2 quart casserole (I use a 9×13 pan). Sprinkle with half the onion, salt, pepper, cheese and ham; repeat. Pour white sauce over casserole. Dot with butter. Cover; bake 30 minutes. Uncover; bake 15 minutes longer.
6 to 8 servings.
Makes great leftovers, if you have any!
